A warm welcome awaits you at Di Paolo’s, situated to the side of the De La Warr Pavillion, Bexhill-On-Sea. John and his son Luigi continue the family tradition of producing Italian gelati started over 100 years ago and winning national awards since the 1930’s.
Recently John and Luigi found their orders growing and facing the unpleasant prospect of not being able to produce sufficient ice cream to fulfil demand.
Not only had retail sales increased but the recent refurbishment of their Bexhill-On-Sea parlour was drawing in more custom.
John turned to Steve Henshall of Alfred and Co for advice.
Rather than a new pasteurisation plant, a separate air-cooled ageing vat has been installed, allowing the existing pasteurisers to boil more than once a day, with the purchase of a Technogel Mante 30-100 batch freezer being key to more output.
The machine was delivered quickly by Technogel with Steve in attendance for commissioning.
“Everything has gone very smoothly, the new machine is very intuitive and easy to use”, commented Luigi, Di Paolo’s hard-working production manager.
“The Mante is very quick to freeze and gives me the exact consistency I need to decorate our Napoli trays”.
Owner John is pleased too, saying “Steve gave me a very good deal on the two machines and I look forward a long relationship with him and Alfred’s”.
