Product Description
The all stainless steel hollow dasher is fitted with an eccentric shaft and with stainless steel dasher blades. Rotating at high speed this arrangement ensures and ice cream of fine and creamy structure.
The lobe pumps are mounted in the lower part of the machine:
- The first one for pumping the ice cream mix (in liquid solution at 4°C) into the freezing cylinder,
- The second to discharge the ice cream from the cylinder.
Both pumps are equipped with independent inverters controlled by the PLC for the set up and control of production parameters such as quantity, overrun, and viscosity.
The pump body is made from a single stainless steel piece and it is equipped with pneumatic bypass for a perfect CIP cleaning. The air for the overrun, metered by a mass flow meter then filtered, is injected directly into the freezing cylinder, obtaining an ice cream with volume increase from 30% to 140%. The pressure cylinder is automatically controlled.
Should wear occur in the mix pump then the pump will no longer pass the specified volume of ice cream, should this happen the mix mass flow meter will signal the PLC to increase the pump speed until the desired flow rate is achieved. Likewise the overrun air is metered in through a mass flow meter ensuring the correct volume of air is added. Using these two components makes the overrun rock steady and eliminates the need for constant check weighing.
